I brought $400 w/me and still had extra, and I mostly spent on shopping stuff I brought home. This will last you plenty pp if you know how to spend. Laying on the beach costs you nothing. Take the bus to get around - completely safe and very cheap. You can get a decent meal that will really fill you for $10 pp. Drinks - well that's going to cost you at the hotel! You can go to Soriano's market or Walmart and buy some cerveza or tequila there!!!!! Much much cheaper.
References :
Trip in September 2008

Best to bring your ATM card and get out pesos as needed, rather than carry large amounts of cash.
References :
Really depends on what you want to do...given what you listed there, I would say about $800 USD each, or about $1500 for the two of you. Cabs are cheap, just make sure the fare is stated when leaving from the hotel so the driver doesn't try to bilk some extra dollars out of you.

You'll get a lot more by changing your dollars to pesos, and asking for costs (cabs, craft stands, flea markets, jewelry shops, etc.) in pesos rather than dollars, because merchants will quote you at a 10:1 ratio (i.e. 100 pesos to 1 $US dollar) whereas the rate is really around 14:1 but nobody likes to do the math, right? :) Really depends on if you'll be doing actual shopping vs. window shopping...

Very incredible meals can be done on the cheap, as are drinks. There is a strip on the malecon where you sit on plastic chairs on the beach and can order 3 beers and a cocktail for $5. I think it is called Burros Bar, but I don't remember as I ordered several of the aforementioned combinations! But there is a wooden donkey on the sidewalk, you can't miss it!
References :
Been there three times in three years!

If you want to have a better vacation head about thirty miles north on highway 200 and head to Sayulita or San Pancho. But in PV for food and what not you should bring about 600 per person. It would be cheaper in the other towns I mentioned.
References :
Just came back from there a few weeks ago!
