You must show proof of US residency (green card) when you travel to Mexico. If the production of your new green card is still in the making, please make an appointment with your local USCIS office (through Infopass) and get them to stamp a provisional i-551 stamp on your passport. That'll do.
References :
If you're going to Mexico you will be required to show your Green card on re-entry[NOT a copy] & entering without it can bring more problems than you can imagine like sitting in a jail while they thoroughly check out your status & that you are actually who you say you are not to mention that if they find out you've been telling the truth the large fine[~$1000 US] you will have to pay for not having your green card on you to showcase for inspection.
